dough.ray.me. is a Neapolitan style Pizza pop up that delivers quality flavour using fresh, local ingredients to its customers. Cooking Neapolitan style pizza requires an oven heated to approx 425ºC for that perfect pizza in under 2 minutes. Customers will be able to choose from a variety of classic pizzas ranging from the ‘Margherita’ to the ‘Diavolo’, optimising on the fantastic produce that East Sussex has to offer, along with specials that will change seasonally to take advantage of the freshest ingredients to be found.
dough.ray.me. uses Italian 00 Caputo Flour which creates the familiar texture of Neapolitan style pizza whilst generating a wonderfully light and puffy crust. San Marzano Tomatoes will take centre stage of the tomato based pizza’s with their sweet and colourful flavour, grown in Campania near Naples. We use British Cream for our white based Pizzas and a selection of British cheeses. Our dough is fermented to create a beautiful taste and a pizza that is extremely easy to digest, ensuring you feel full, but not bloated!


A love story over pizza...
Ray and Anthony's story...
Our story began when we ate pizza on a beach touring a show around the UK. What started with a love of pizza (an unhealthy love of it from Anthony, some might say!) blossomed into a beautiful romance, where they married and now live in the gorgeous St Leonards on Sea! dough.ray.me. love to combine live music and pizza, where by you can hire us to take care of your event, providing live cello, 3 part harmony group and pizza! What more can you ask for!
